‘I was cutting off fish heads all day long and putting heads into one basket and the rest of the fish into another. Without gloves, without aprons, without rubber boots. One was wet and covered in blood from head to toe. Especially at the beginning, when you are starting off, and you do not know your way around it… I have shed some tears, I have… But you had to keep going… And in one year, or even less, I came to love working in Delamaris.’
